We have been investigating how to create crystals from a variety of sugars.  We dissolved our sugar in water until the water was saturated by adding spoonfuls of sugar until the sugar didn’t dissolve any more.  We had all sorts of sugar including Demerara, icing sugar, brown, coffee sugar, jamsetting sugar and raw sugar. We put a peice of string in the mixture and now we are waiting to find out the results.  We are wondering which sugar grows the best crystals and which sugar will be the fastest.
